Ingredients
  

Chicken and Bowl

  • 1 lb boneless skinless chicken breast cut into bite-sized pieces
  • 1 cup cooked rice white, brown, or cauliflower rice
  • 1 cup mixed vegetables broccoli, bell peppers, carrots
  • 2 tbsp olive oil
  • salt and pepper to taste

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp fresh lime juice

Instructions
 

  • Whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice until smooth. Set aside.
  • Cut chicken into bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Cook chicken for 6–8 minutes until golden and cooked through.
  • Steam or sauté vegetables until tender-crisp, about 4–5 minutes.
  • Toss warm chicken with half of the bang bang sauce.
  • Assemble bowls with rice, chicken, vegetables, and drizzle with remaining sauce. Serve immediately.

Notes

Adjust the spice level by adding more or less sriracha. Store sauce separately if meal prepping.
