Ingredients
  

  • 2 cups cooked white rice cold, day-old rice is best
  • 2 tablespoons avocado oil or safflower or vegetable oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups cooked chicken cubed
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen mixed vegetables
  • 2 large eggs beaten
  • 3 tablespoons soy sauce or tamari for gluten-free
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons butter
  • 2 green onions sliced (optional)

Instructions
 

  • Heat avocado oil in a large skillet over medium-high heat. Add diced onion and cook until translucent.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Add cooked chicken and black pepper. Stir-fry for 2-3 minutes until heated through.
  • Push the mixture to one side of the skillet. Pour beaten eggs into the other side and scramble until just set.
  • Add cold, cooked rice and frozen mixed vegetables. Stir everything together and cook for 3-4 minutes.
  • Drizzle soy sauce and toasted sesame oil over the rice. Stir well to combine.
  • Add butter and stir until melted and evenly distributed.
  • Garnish with sliced green onions if desired. Serve hot.

Notes

For best results, use day-old rice to prevent mushiness. Customize by adding your favorite vegetables or proteins.
