Ingredients
  

Buffalo Chicken

  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup hot sauce such as Frank’s RedHot
  • 1/4 cup unsalted butter melted
  • 2 tablespoons olive oil
  • salt and pepper to taste

For the Bowls

  • 2 cups cooked rice white or brown
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch or blue cheese dressing
  • 1/4 cup green onions thinly sliced
  • avocado sliced, optional

Instructions
 

  • In a small bowl, combine the hot sauce and melted butter. Mix well and set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt and pepper.
  • Cook the chicken for 5 to 7 minutes until browned and cooked through.
  • Reduce the heat to low and pour the buffalo sauce over the chicken. Stir to coat evenly.
  • Let the chicken simmer for 3 to 5 minutes so it absorbs the sauce.
  • Divide cooked rice among bowls. Top with buffalo chicken, lettuce, tomatoes, cheese, dressing, green onions, and avocado if using.

Notes

Adjust the heat level by adding more or less hot sauce. Store components separately for easy meal prep.
