- 4 cups cooked rice cold, day-old rice works best
- 1 lb chicken thighs boneless & skinless, cut into bite-sized pieces
- 3 tbsp coconut oil
- ½ yellow onion chopped
- ½ green bell pepper chopped
- ½ red bell pepper chopped
- 1 clove garlic minced
- 1 inch fresh ginger grated
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 ½ cups pineapple cubed (fresh or canned)
- ¾ cup frozen peas no need to thaw
- 1 small lime juice
