skinless, boneless chicken breast halves

panko bread crumbs

freshly grated Parmesan cheese
divided

prepared tomato sauce

fresh mozzarella
cut into small cubes

Instructions
Preheat the oven to 450°F (230°C).
Place chicken breasts between two sheets of plastic and pound to 1/2 inch thickness.
Season with salt and pepper. Lightly coat with flour.
Beat the eggs in a shallow bowl. Mix panko with 1/2 cup Parmesan in another bowl.
Dip each chicken breast in the eggs, then into the breadcrumb mixture, pressing to adhere. Let rest for 10 to 15 minutes.
Heat 1/2 inch of olive oil in a skillet over medium-high heat. Cook chicken for 2 minutes per side, until golden.
Transfer chicken to a baking dish. Top with tomato sauce, mozzarella, basil, provolone, remaining Parmesan, and a drizzle of olive oil.
Bake for 15 to 20 minutes, until cheese is bubbly and chicken reaches 165°F. Let rest before serving.
Notes
For extra crispiness, let breaded chicken rest before frying. Use freshly grated cheese for best melting and flavor.
