Ingredients
  

  • 4 skinless, boneless chicken breast halves
  • salt and freshly ground black pepper to taste
  • 2 large eggs
  • 1 cup panko bread crumbs or more as needed
  • 3/4 cup freshly grated Parmesan cheese divided
  • 2 tbsp all-purpose flour or more if needed
  • 1/2 cup olive oil for frying, or as needed
  • 1/2 cup prepared tomato sauce
  • 1/4 cup fresh mozzarella cut into small cubes
  • 1/4 cup fresh basil chopped
  • 1/2 cup freshly grated provolone cheese
  • 2 tsp olive oil

Instructions
 

  • Preheat the oven to 450°F (230°C).
  • Place chicken breasts between two sheets of plastic and pound to 1/2 inch thickness.
  • Season with salt and pepper. Lightly coat with flour.
  • Beat the eggs in a shallow bowl. Mix panko with 1/2 cup Parmesan in another bowl.
  • Dip each chicken breast in the eggs, then into the breadcrumb mixture, pressing to adhere. Let rest for 10 to 15 minutes.
  • Heat 1/2 inch of olive oil in a skillet over medium-high heat. Cook chicken for 2 minutes per side, until golden.
  • Transfer chicken to a baking dish. Top with tomato sauce, mozzarella, basil, provolone, remaining Parmesan, and a drizzle of olive oil.
  • Bake for 15 to 20 minutes, until cheese is bubbly and chicken reaches 165°F. Let rest before serving.

Notes

For extra crispiness, let breaded chicken rest before frying. Use freshly grated cheese for best melting and flavor.
