Instructions
Cut chicken into 3-inch pieces. Pat dry and season well with salt and pepper. Dredge lightly in flour and shake off excess.
Heat a large skillet over medium. Add olive oil. Sear chicken for 3 minutes per side without crowding. Remove to a plate and tent with foil.
Add mushrooms to the same skillet. Cook 5 to 7 minutes until browned. Add garlic and cook 2 minutes more.
Season mushrooms with salt and pepper. Add wine and chicken stock. Scrape browned bits with a wooden spoon. Increase heat and reduce liquid by half.
Add chicken back to the skillet along with the spinach. Cover and cook 2 to 3 minutes to wilt spinach and warm chicken.
For a thicker sauce, add half the cornstarch slurry and cook until thickened. Add more if needed.
Turn off heat. Add butter and stir until melted. Taste and adjust seasoning. Serve with crusty bread or rice.
Notes
For a creamier variation, add a splash of heavy cream after reducing the stock and wine. Serve with pasta, mashed potatoes, or rice.
