Ingredients
  

Main Ingredients

  • 2 pounds thin sliced chicken cutlets pounded flat
  • salt and pepper to taste
  • 1/2 cup flour for dredging
  • 1/4 cup olive oil
  • 1 pound cremini mushrooms sliced
  • 5 cloves garlic sliced
  • 3/4 pound baby spinach
  • 1 cup low sodium chicken stock
  • 3/4 cup dry white wine
  • 3 tablespoons butter

Optional Cornstarch Slurry

  • 2 tablespoons cornstarch
  • 1/4 cup water

Instructions
 

  • Cut chicken into 3-inch pieces. Pat dry and season well with salt and pepper. Dredge lightly in flour and shake off excess.
  • Heat a large skillet over medium. Add olive oil. Sear chicken for 3 minutes per side without crowding. Remove to a plate and tent with foil.
  • Add mushrooms to the same skillet. Cook 5 to 7 minutes until browned. Add garlic and cook 2 minutes more.
  • Season mushrooms with salt and pepper. Add wine and chicken stock. Scrape browned bits with a wooden spoon. Increase heat and reduce liquid by half.
  • Add chicken back to the skillet along with the spinach. Cover and cook 2 to 3 minutes to wilt spinach and warm chicken.
  • For a thicker sauce, add half the cornstarch slurry and cook until thickened. Add more if needed.
  • Turn off heat. Add butter and stir until melted. Taste and adjust seasoning. Serve with crusty bread or rice.

Notes

For a creamier variation, add a splash of heavy cream after reducing the stock and wine. Serve with pasta, mashed potatoes, or rice.
