Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
In a small bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, rosemary, salt, pepper, and oregano to make the marinade.
Place chicken tenderloins in the baking dish and pour the marinade over the chicken. Let it sit for 10–15 minutes (or longer if time permits).
Add the jasmine rice and tzatziki over and around the chicken in the baking dish. Gently mix to combine.
Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5 minutes until chicken is cooked through and the dish is hot and bubbling.
Remove from oven and let rest for 5 minutes before serving. Top with romaine lettuce, cherry tomatoes, cucumber, feta, and optional pickled onions.
Notes
Customize with kalamata olives, hummus, or naan for added variety. Great for meal prep or next-day leftovers!
