Ingredients
  

Chicken

  • 1.5 lbs boneless skinless chicken breasts or thighs cut into bite-sized pieces
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder

Cowboy Butter Sauce

  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard optional
  • 0.5 tsp red pepper flakes adjust to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Cut the chicken into bite-sized pieces and pat dry with paper towels. Season evenly with salt, black pepper, smoked paprika, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and sear for 2 to 3 minutes until golden brown.
  • Flip the chicken and cook for another 3 to 4 minutes until fully cooked through. Remove from the skillet and set aside.
  • In a saucepan, melt the butter over medium heat. Add minced garlic, lemon juice, Dijon mustard, and red pepper flakes. Simmer for 1 minute until fragrant.
  • Return the cooked chicken to the pan and toss in the sauce. Cook on low heat for 1 minute to coat evenly.
  • Transfer to a serving dish, drizzle with extra sauce, garnish with fresh parsley, and serve immediately.

Notes

Serve over rice, in wraps, or as an appetizer. Adjust red pepper flakes to control heat.
