Instructions
Season the chicken with salt, pepper, garlic powder, onion powder, and paprika.
Heat olive oil in a skillet and sear the chicken until golden brown. Remove and set aside.
In the same skillet, melt butter and sauté onion until soft. Add garlic and cook until fragrant.
Pour in chicken broth and heavy cream. Stir in thyme, parsley, salt, and pepper. Simmer gently.
Add chicken back to the skillet, cover, and let it simmer until cooked through. Use cornstarch slurry if you want a thicker sauce.
Meanwhile, cook rice in water or chicken broth until fluffy.
Serve the chicken smothered in creamy sauce over the rice, garnished with fresh parsley if desired.
Notes
For extra flavor, try adding mushrooms or spinach to the sauce. You can also swap heavy cream for half-and-half for a lighter version.
