Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 2 cups instant white rice
  • 2 cups reduced sodium chicken broth
  • 10.5 oz cream of mushroom soup
  • 10.5 oz cream of chicken soup
  • 0.5 cup sour cream
  • 0.25 cup milk
  • 0.5 tsp poultry seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper
  • 3-4 cups cooked chopped turkey
  • 4 cups broccoli florets
  • 1.5 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent.
  • In a large bowl, combine cream of mushroom soup, cream of chicken soup, sour cream, milk, poultry seasoning, garlic powder, and black pepper. Mix until smooth.
  • Stir in cooked rice, sautéed onions, chopped turkey, and broccoli florets until well combined.
  • Fold in 1 cup of shredded cheddar cheese.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • Sprinkle the remaining 0.5 cup of shredded cheddar cheese over the top.
  • Bake uncovered for 25–30 minutes, or until the cheese is bubbly and golden.
  • Let the casserole rest for 5 minutes before serving.
