Ingredients
  

  • 4 tbsp unsalted butter cut into small pieces
  • 1.5 lb boneless skinless chicken breasts cut into bite-sized pieces
  • 1 cup chopped white onion about 1 medium
  • 2 tbsp minced fresh garlic about 4 cloves
  • 1.5 cups long-grain white rice rinsed
  • 3-4 cups chicken broth
  • 2 tbsp fresh lemon juice juice of 1 large lemon
  • 1 cup shredded parmesan cheese
  • 1.5 tsp salt or to taste
  • 0.25 tsp black pepper or to taste

Instructions
 

  • Set Instant Pot to Sauté mode. Add butter and let it melt.
  • Add onion and garlic; sauté until onion is translucent (~5 minutes).
  • Add chicken; sauté until opaque on all sides (~5 minutes).
  • Stir in rice, broth, and lemon juice; scrape bottom to loosen bits.
  • Seal lid and pressure cook on High for 8 minutes.
  • Allow a 2-minute natural release, then quick release and open lid.
  • Stir in parmesan, salt, and pepper until creamy.
  • Let rest for 5 minutes, fluff with a fork, then serve warm.

Notes

For firmer rice use 3 cups broth; for soupier, 4 cups. Rinse rice first for fluffiness.
