Ingredients
  

  • 2 tsp paprika
  • 1 1/2 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper freshly ground
  • 1 whole chicken 4 to 5 pounds
  • 2 tbsp olive oil oven method only

Instructions
 

  • In a small bowl, whisk together paprika, thyme, garlic powder, onion powder, salt, and black pepper.
  • Remove giblets from the chicken, pat dry, and truss for even cooking.
  • For rotisserie cooking, skewer the chicken and rub the spice mixture evenly over the skin.
  • Cook on the rotisserie according to manufacturer instructions, about 1 hour, until internal temperature reaches 165°F.
  • For oven cooking, preheat oven to 425°F and place chicken in a roasting pan or cast iron skillet.
  • Brush chicken with olive oil, apply seasoning, and roast uncovered for 70 to 80 minutes, basting occasionally.
  • Remove chicken once it reaches 165°F internally and rest for 10 minutes before carving.

Notes

Store leftovers in the refrigerator for up to 4 days. Great for salads, wraps, soups, and meal prep.
