Instructions
In a small bowl, whisk together paprika, thyme, garlic powder, onion powder, salt, and black pepper.
Remove giblets from the chicken, pat dry, and truss for even cooking.
For rotisserie cooking, skewer the chicken and rub the spice mixture evenly over the skin.
Cook on the rotisserie according to manufacturer instructions, about 1 hour, until internal temperature reaches 165°F.
For oven cooking, preheat oven to 425°F and place chicken in a roasting pan or cast iron skillet.
Brush chicken with olive oil, apply seasoning, and roast uncovered for 70 to 80 minutes, basting occasionally.
Remove chicken once it reaches 165°F internally and rest for 10 minutes before carving.
Notes
Store leftovers in the refrigerator for up to 4 days. Great for salads, wraps, soups, and meal prep.
