Ingredients
  

  • 2 lbs chicken thighs (bone-in preferred)
  • 1/3 cup soy sauce
  • 1/3 cup white vinegar
  • 6 cloves garlic smashed
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tbsp brown sugar optional, to balance flavor
  • 1 cup water or chicken broth
  • oil for sautéing

Instructions
 

  • Heat oil in a large pot and sear the chicken pieces on all sides until lightly browned.
  • Add garlic and sauté briefly until fragrant.
  • Pour in soy sauce and vinegar. Do not stir after adding the vinegar.
  • Add bay leaves, peppercorns, and water or broth.
  • Bring to a boil, then reduce heat and simmer uncovered for about 35 minutes until chicken is tender and sauce has reduced.
  • Adjust seasoning to taste and serve hot with rice.

Notes

For a richer flavor, marinate the chicken in soy sauce, vinegar, and garlic for 30 minutes before cooking.
