Ingredients
  

Chicken Marinade

  • 1.5–2 pounds chicken thighs or breasts
  • 2–3 cloves garlic minced
  • 2 tablespoons lime juice or white vinegar
  • 2 tablespoons oil neutral oil
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper

Green Sauce

  • 1 cup fresh cilantro
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 2 jalapeños chopped
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon lime or lemon juice
  • salt & pepper to taste

Yellow Rice

  • 1 cup jasmine rice
  • 1 tablespoon butter or oil
  • 0.25 cup diced onion
  • 2–3 cloves garlic minced
  • 1 teaspoon turmeric
  • 0.25 teaspoon cumin
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups chicken stock
  • 1 cup frozen peas

Instructions
 

  • Marinate the chicken with garlic, lime juice, oil, cumin, smoked paprika, salt, and pepper. Let sit for 15–30 minutes.
  • Blend all green sauce ingredients together until smooth and creamy. Adjust seasoning to taste and refrigerate until ready to use.
  • Heat oil or butter in a saucepan. Sauté onion and garlic until soft. Stir in rice and spices (turmeric, cumin, onion powder, salt, and pepper) and toast for 2–3 minutes.
  • Add chicken stock and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes. Stir in frozen peas in the last 5 minutes.
  • While rice cooks, pan-fry marinated chicken in a hot skillet for 5–7 minutes per side, or until cooked through and golden brown.
  • Serve the chicken over green rice, topped generously with the green sauce.

Notes

This dish is flexible, use whatever fresh herbs or greens you have for the sauce, and adjust spice levels to your taste. Make it vegetarian by substituting tofu or roasted veggies for chicken.
