Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, whisk together Greek yogurt, softened cream cheese, garlic powder, onion powder, dried parsley, and red pepper flakes until smooth.
Add broccoli florets, shredded chicken, rinsed rice, and broth to the bowl. Mix well to coat everything evenly. Season with salt and pepper.
Transfer the mixture into a greased 9×13 baking dish and spread evenly.
Top with shredded cheddar cheese.
Bake uncovered for 40–45 minutes, until rice is tender and casserole is bubbling.
Let rest for 5–10 minutes before serving. Garnish with parsley, hot sauce, or red pepper flakes if desired.
Notes
This casserole is freezer-friendly. Assemble ahead of time and bake when ready, or store leftovers in airtight containers for up to 4 days.
