Ingredients
  

For the Chicken

  • 1 lb boneless chicken thighs or breasts
  • 2 tbsp honey
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • salt and pepper to taste

For the Rice

  • 2 cups cooked jasmine or basmati rice
  • 1/4 cup chopped cilantro fresh
  • 1 tbsp lime juice
  • salt to taste

For the Avocado Salsa

  • 1 large avocado diced
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • salt and pepper to taste

Instructions
 

  • Marinate the Chicken: In a bowl, mix honey, lime juice, olive oil, chili powder, garlic powder, salt, and pepper. Toss the chicken in the marinade and let sit for 15–30 minutes.
  • Cook the Chicken: Grill or pan-sear the chicken over medium-high heat for about 4–5 minutes per side until caramelized and cooked through.
  • Prepare the Rice: Toss the cooked rice with lime juice, cilantro, and a pinch of salt. Fluff lightly with a fork.
  • Make the Avocado Salsa: Gently mix diced avocado with lime juice, cilantro, salt, and pepper in a small bowl.
  • Assemble the Stack: Layer cilantro-lime rice on a plate, top with honey lime chicken, and finish with a scoop of avocado salsa. Serve immediately and enjoy!

Notes
