In a small-medium saucepan, combine the 1 cup of water, sriracha, soy sauce, garlic, sugar, and honey. Stir well and bring to a boil over medium heat.
In a small bowl, whisk together 2 tablespoons corn starch and 2 tablespoons cold water until smooth. Add to the saucepan and stir until the sauce thickens. Reduce heat to low and keep warm.
Place diced chicken and 1/3 cup corn starch in a large plastic bag. Seal and shake to coat evenly.
Heat a large skillet with a drizzle of oil over medium heat. Add coated chicken and sauté until browned and fully cooked through.
Pour the prepared sauce over the cooked chicken. Stir gently until all pieces are coated and glossy.
