Ingredients
  

Garlic Fried Rice Base

  • 2 tbsp neutral oil such as canola, sunflower, or vegetable oil
  • 10 cloves garlic minced
  • 2 cups rice cooked and cooled, preferably day-old rice
  • 1/2 tsp salt adjust to taste

Instructions
 

  • Prepare the rice. If using freshly cooked rice, spread it on a tray and let it cool for at least an hour. Cold, day-old rice works best.
  • Heat 2 tablespoons of neutral oil in a wok or skillet over medium heat until shimmering.
  • Add minced garlic to the oil and sauté until golden and fragrant. Stir constantly to prevent burning.
  • Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir to coat each grain with garlic oil.
  • Season with 1/2 teaspoon salt (or to taste). Stir-fry for 3–5 minutes until the rice is hot and slightly crisp.
  • Sprinkle reserved fried garlic on top before serving. Enjoy as a side or pair with eggs, meats, or vegetables.

Notes

Pro tip: Set aside a spoonful of fried garlic before adding the rice and use it as a crunchy topping for extra flavor.
