Garlic Fried Rice Base

such as canola, sunflower, or vegetable oil

cooked and cooled, preferably day-old rice

Instructions
Prepare the rice. If using freshly cooked rice, spread it on a tray and let it cool for at least an hour. Cold, day-old rice works best.
Heat 2 tablespoons of neutral oil in a wok or skillet over medium heat until shimmering.
Add minced garlic to the oil and sauté until golden and fragrant. Stir constantly to prevent burning.
Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir to coat each grain with garlic oil.
Season with 1/2 teaspoon salt (or to taste). Stir-fry for 3–5 minutes until the rice is hot and slightly crisp.
Sprinkle reserved fried garlic on top before serving. Enjoy as a side or pair with eggs, meats, or vegetables.
Notes
Pro tip: Set aside a spoonful of fried garlic before adding the rice and use it as a crunchy topping for extra flavor.
