uncooked orzo pasta

lemon juice

rotisserie chicken recommended

Instructions
Add the oil, butter, and onion to a pot over medium-high heat. Sauté the onion for 3 to 4 minutes.
Add the garlic, Italian seasoning, and orzo. Cook for 2 to 3 minutes, stirring often to toast the orzo.
Stir in the chicken broth, lemon juice, and cream. Once it starts to bubble, cook for 10 minutes uncovered, stirring often.
Stir in the chicken.
Remove from heat, stir in parmesan and spinach, and cover for 3 to 5 minutes until thickened.
Season with salt and pepper and serve immediately.
Notes
Adjust lemon juice to taste. Add more broth if the orzo becomes too thick while cooking.
