Instructions
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Season the chicken breasts with salt, pepper, and 2 teaspoons of Italian seasoning.
In a skillet, melt the butter over medium heat. Sear each chicken breast for 2–3 minutes per side until golden. Set aside.
In the baking dish, combine the uncooked rice, chicken broth, lemon juice, and 1 teaspoon of Italian seasoning. Stir gently.
Place the seared chicken on top of the rice mixture.
Cover tightly with foil and bake for 45–50 minutes.
Remove from the oven, let it rest for 5 minutes, then fluff the rice with a fork and serve.
Notes
Feel free to add vegetables like peas or carrots to the rice for a colorful twist!
