yellow onion

green onion tops

preferably turkey thighs

chipotle powder or chili powder
or to taste

Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped onion and bell pepper and cook until softened.
Add the minced garlic and cook for about 30 seconds, just until fragrant.
Push the vegetables to one side of the pan. Add more olive oil to the empty side and place the ground turkey in loose chunks.
Season the turkey with salt and chipotle or chili powder. Let it brown on one side before turning.
Once the turkey is cooked through, stir it together with the vegetables. Adjust seasoning to taste.
Remove from heat and stir in the fresh chopped parsley or cilantro before serving.
Notes
Serve on its own, over rice or noodles, or use as a filling for wraps and tacos. Leftovers keep well in the fridge for up to 4 days.
