Ingredients
  

  • 3–4 tbsp extra virgin olive oil
  • 1 cup yellow onion chopped
  • green onion tops chopped, optional
  • 1 bell pepper red or yellow, chopped
  • 2 cloves garlic minced
  • kosher salt to taste
  • 1 lb ground turkey preferably turkey thighs
  • 1 tsp chipotle powder or chili powder or to taste
  • 2 tbsp fresh parsley or cilantro chopped

Instructions
 

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped onion and bell pepper and cook until softened.
  • Add the minced garlic and cook for about 30 seconds, just until fragrant.
  • Push the vegetables to one side of the pan. Add more olive oil to the empty side and place the ground turkey in loose chunks.
  • Season the turkey with salt and chipotle or chili powder. Let it brown on one side before turning.
  • Once the turkey is cooked through, stir it together with the vegetables. Adjust seasoning to taste.
  • Remove from heat and stir in the fresh chopped parsley or cilantro before serving.

Notes

Serve on its own, over rice or noodles, or use as a filling for wraps and tacos. Leftovers keep well in the fridge for up to 4 days.
