Ingredients
  

  • 1 lb Chicken Breasts
  • cups Basmati Rice
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 Carrot diced
  • ½ cup Frozen Green Peas
  • 1 tbsp Tomato Paste
  • 4 tbsp Olive Oil
  • 3 cups Water or Stock
  • 1 Lemon juiced

Instructions
 

  • Heat olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until fragrant.
  • Add the chicken breasts and cook until lightly browned on both sides.
  • Stir in the tomato paste, carrots, and peas. Cook for a couple of minutes.
  • Add the rice and stir to coat with the spices and oil.
  • Pour in the water or stock. Bring to a boil, then reduce heat to low and cover.
  • Simmer for 20–25 minutes or until the rice is fully cooked and the liquid is absorbed.
  • Fluff the rice with a fork, drizzle with lemon juice, and serve hot.

Notes

You can add a cinnamon stick or bay leaf for extra aroma while simmering. For extra protein, top with toasted pine nuts or almonds.
