Ingredients
  

Chicken

  • 4 boneless, skinless chicken breasts

Coating

  • 2 cups crushed rice cereal
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, combine flour, salt, pepper, and paprika.
  • Place beaten eggs in a separate bowl, and crushed rice cereal in another.
  • Dredge each chicken breast in the flour mixture, then dip into the eggs, and finally coat with crushed rice cereal.
  • Place coated chicken breasts on the prepared baking sheet.
  • Bake for 25 minutes or until the chicken is cooked through and the coating is golden brown.
  • Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, marinate the chicken in buttermilk for a few hours before coating. Serve with your favorite dipping sauce or a side of vegetables for a complete meal.
