Ingredients
  

Chicken Marinade

  • 2 tsp mild yellow curry powder
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1/4 tsp ground cardamom
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tsp vegetable oil for seasoning chicken

Chicken

  • 4 chicken thighs bone-in, skin-on
  • 1 tbsp vegetable oil for searing

Instructions
 

  • Mix the curry powder, ground ginger, garlic powder, cardamom, paprika, and salt together in a small bowl.
  • Rub chicken thighs with 2 teaspoons of vegetable oil and coat them evenly with the spice mixture.
  • Let the chicken marinate for at least 20 minutes, or refrigerate overnight for deeper flavor.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat.
  • Sear chicken skin-side down for 5–7 minutes until golden and crispy.
  • Flip chicken, reduce heat to medium, and cook for 15–20 minutes or until it reaches 165°F (74°C).
  • Remove from heat and rest for 5 minutes before serving.

Notes

Serve this spiced chicken with basmati rice, naan bread, or a cooling yogurt raita. You can also try it with garlic fried rice or Tex-Mex chicken and rice for a fun twist.
